That sounds awesome! But are there any downsides to stainless steel boilers? I've heard they may well not retain calefaction aswellas more materials.

I think that's a valid concern. Stainless steel does get a reduce thermal conductivity when compared to materials like copper, so you may need a little bit more patience when waiting for the device to heat up first. But once it's up to temperature, it holds it pretty consistently in my experience.
