Personally, i love employing cast iron for factors like creating pancakes or searing steaks. The even heat distribution and retention of cast steely truly help reach that best crust. But i also keep some stainless steel pans around for tasks like generating sauces or cooking acidic foods, where the reactive essence of cast steely may well not be ideal.
