from what I've read, the black color on stainless steel watches is typically achieved through a method called Physical Vapor Deposition (pvd), where a thin layer of a black material s is deposited onto the surface area of the stainless steel by a vacuum chamber. It's a pretty high-tech method, but it results in a durable and scratch-resistant finish that won't chip or fade over moment.
